Alchemy's 15 Days of Recipes - Best Coffee Cake Ever

One of my most fond memories as a child is spending time with my Nana. She loved to play games. We spent hours playing cards. Our day consisted of waking up in the morning to play cards, eat breakfast, play, eat lunch, play, make coffee cake, play. One weekend we played 176 games of cards. So, here is the recipe for the Best Coffee Cake Ever. Of course...you can play a few card games while it’s baking! - Shawna
Best Coffee Cake Ever
Yield: 2 loaves
Preheat oven to 350.
Add to mixing bowl:
1 box Duncan Hines yellow deluxe cake mix
1 box instant vanilla pudding mix + 2 tbsp flour
Mix one at a time, beat until smooth, 6-8 minutes on high:
3/4 cup water
1/2 cup corn oil
1/2 tsp vanilla
4 eggs
1/4 tsp butter extract
Mix together in separate bowl:
1/2 cup sugar
1/2 cup nuts
2 tsp cinnamon
Grease and flour 2 regular loaf pans or place wax paper on bottom of each. Divide 1/2 sugar mix between both pans and sprinkle on bottom of each pan, divide half the batter between both pans pouring over sugar mix, sprinkle remaining sugar mix over batter. Swirl with fork through batter. Bake 40-45 minutes. Remove from pans when slightly cooled. Place on foil while still warm. Can drizzle with 1 cup powdered sugar, 3 tbsp milk, 1/8 tsp butter extract.
